The actual steps. What to do first, second, third. What tools to use. What to say. What to track. What the done state looks like.
Once it's documented, test it.
Have someone on your team follow the documentation without your help. If they can do it and get the right result, the documentation works. If they can't, the documentation is incomplete. Fix it and test again.
The goal isn't perfect documentation. The goal is documentation good enough that someone else can execute the process and produce a consistent result without you. That's a system. That's what scales.
